Kale Salad Paired with Organic Agriculturist Wine from Frey Vineyards

A kale salad that’s hearty enough for dinner AND red wine! Pairs great with full-bodied reds like Frey Wine’s Organic Agriculturist, a tannic syrah-merlot blend available exclusively at Whole Foods.

Chef Sita’s Kale Salad
Kale, massaged or marinated
Baby lettuces
Sliced fennel
“Segmented” citrus
Toasted pine nuts or hazelnuts
Honey shallot vinaigrette (recipe below)

Chef Sita’s Honey Shallot Vinaigrette 
1 shallot, grated
1/2 tsp dried thyme
2 Tbs honey
2 Tbs White Wine Vinegar
1/2 cup Extra Virgin Olive Oil
1 tsp minced fresh tarragon
Pinch of sea salt
Freshly ground black pepper

In a small mixing bowl, combine the grated onion, dried thyme, honey and white wine vinegar. Stream in extra virgin olive oil while whisking to emulsify the vinaigrette. Stir in the fresh tarragon and season with salt and pepper.

    The Honey Shallot Vinaigrette is missing ingredients – mainly the honey and wine portions. Could be other things missing as well. Can you resend this recipe with all the measurements for all of the ingredients, please?

    I used to think I didn’t like raw kale because I found it a liltte too tough and then I realized that letting it sit for a bit with dressing softens it to just the right texture (for my taste, anyway). This salad looks delicious and definitely a welcome change after all the indulging I’ve been doing lately!
